Yoghurt Parfait with Granola and Berries

Ingredients

Granola
1 cup uncooked old fashioned oats
2 Tbsp. sliced almonds
2 Tbsp. chopped pecans
2 Tbsp. EQUAL SPOONFUL OR 3 EQUAL SACHETS
1 Tbsp. olive oil
1/2 Tsp. vanilla extract

YOGHURT PARFAIT

450g plain no-fat greek yogurt
1 Tbsp. EQUAL SPOONFUL or 2 EQUAL SACHETS  
1/4 Tsp. ground cinnamon
1/4 cup fresh blueberries
1/4 cup fresh raspberries

Method

1. For granola, preheat oven to 160°C. Combine all ingredients and spread evenly on baking sheet. Bake 30 minutes or until toasted. Remove from oven and cool completely.

2. For parfaits, combine all ingredients. Divide mixture evenly between 4 serving plates or cups. Layer with granola and berries. Serve.
