Rich Tomato Sauce

Ingredients
2kg tomatoes
2 Tbsp. olive oil
2 leeks, finely chopped
4 cloves garlic, crushed
¼ cup EQUAL SPOONFUL
1 cup water
2 Tbsp. tomato paste
¼ cup chopped fresh parsley
¼ cup chopped fresh basil
3 small red chillies, seeded, finely chopped (optional)
Method
1. To peel the tomatoes, bring a large saucepan of water to the boil. Make a few small cuts into the skin of each tomato, add them to the water and simmer for 2 minutes or until the skins start to peel away. Drain them and leave until cool enough to handle them.
2. Slide the skins off and chop the tomatoes finely.
3. Combine the oil, leeks, garlic and chillies (if using) in the saucepan, stir over medium heat until softened. Add the tomatoes, EQUAL, water, tomato paste, parsley, basil, salt and pepper, bring to the boil.
4. Reduce heat to low and cook for 50 minutes or until reduced and thickened. Cool.
*Serving Suggestion - This recipe makes a great fresh pasta sauce, pizza base or salsa dip.
