Baked Stuffed Apples with Salted Caramel Sauce

Ingredients

6 granny smith apples, cored
½ cup sultanas
¼ cup walnuts, chopped
¼ cup quick oats
1 Tsp. cinnamon
1 Tsp. mixed spice
1 Tbsp. EQUAL SPOONFUL
½ Tsp. vanilla bean paste
25g butter, melted

 SALTED CARAMEL SAUCE

125g butter, chopped
¼ cup EQUAL SPOONFUL
1 heaped Tbsp. golden syrup
150mL thickened cream
Pinch of sea-salt flakes

Method

1. Preheat oven to 200°C.

2. Mix together all the ingredients, apart from the apples and set aside.

3. Core 6 apples, and scoop out the flesh carefully to create a hole big enough to stuff the apples.

4. Spoon mixture into the apples, pressing down until each apple is tightly packed with the stuffing mix.

5. Bake apples for 35-40 minutes, or until soft.

 

*Chef’s Tip - For decorating the apples as a Halloween treat, carefully carve faces into the apple skin without piercing too deep into the flesh.
